Shishlik kebab is a popular food in Central Asia, the Caucasus, and Russia. Alternatively known as shish kebab, it consists simply of marinated meat grilled over hot coals and has been part of the food culture of Central Asia, including Iran, for thousands of years. The cooking method of Shishlik Kabab is different from other kababs as it is made with lamb ribs, yogurt, and saffron. The most important part of preparing this meal is the way it is grilled. Consequently, Shishlik Kabab is considered a proper dish for Iranians, and they serve it for exceptional guests and at extraordinary ceremonies.
